Matt Moran and Jake Kellie first worked together as mentor and apprentice at Sydney’s Aria. Now, they are reuniting exclusively for Tasting Australia.

Moran is a star, one with awards, television shows, cookbooks and 11 hospitality ventures to his name. A passion for restaurants and the farms that supply them – including his own family property in New South Wales – runs deep. Aria remains a fine dining beacon, with other standouts from Moran’s portfolio including Chiswick, Chophouse and North Bondi Fish.

Kellie, meanwhile, is best known for arkhé, the fire-driven Adelaide venue that helped usher the city into a new era of innovative dining. His trajectory has been sharp, with a pivotal stint at Singapore’s Michelin-starred Burnt Ends also among highlights to date.

Sydney’s Swillhouse hospitality group is home base for Whelan-Little – a role she took following stints at fellow city hotspot LP’s Quality Meats and Brat Restaurant in London. At every turn fresh produce, close ties with producers and an insistence on sustainability have been crucial.
