Challinor is a leading light in Australian hospitality: a brilliant chef and advocate for mental health across a notoriously demanding profession. She is best known for time with Nomad Group – first at the original Sydney restaurant, then as executive chef with added responsibility for a Melbourne offshoot and the luxe Reine & La Rue. Honest, real and flavourful fare is Challinor’s signature, together with a passion for local ingredients and in-house production.
British McMaster, meanwhile, is a chef, author, presenter and owner of Silo London – the world’s first zero waste restaurant. Recognised by the World’s 50 Best Restaurants among young people shaping the future of gastronomy, he considers waste a failure of the imagination.
Tasting Australia food curator Kane Pollard is also set to star. He leads Adelaide Hills drawcard Ondeen and the beloved Topiary, a teahouse turned restaurant, both inspired by South Australia’s seasonal bounty and the excitement of working with overlooked, often foraged ingredients.
