Brisbane is home to Wolfers, who moved north after time in Sydney restaurants including Monopole and Yellow. His mod-Oz food at Gerard’s Bistro in Fortitude Valley features Middle Eastern flavours.
A deep love of food propelled Kaul into her hospitality career, a move that followed time studying psychology and neuroscience, and working in high fashion. She came to Etta after working at Dinner by Heston Blumenthal, Ezard and Lee Ho Fook, combining global influences that range from Asia to the Middle East.
Restaurant Botanic was named Gourmet Traveller 2022 South Australian Restaurant of the Year - testament to the deliciously different fare James continues to create. His dishes are enlivened with local ingredients, many grown or foraged on site.
