World-renowned Heidi Bjerkan comes to Tasting Australia from Norway, where her restaurant Credo holds both a Michelin star and a Michelin Green Star for its commitment to sustainability. Diners covet Bjerkan's creative and delicately balanced dishes, with all ingredients traceable and used to their full potential.

Torres Straight Islander chef Nornie Bero will also star in Town Square Kitchen. Cooking has been a fixture of Bero's life since childhood; early memories including baking damper with her father and reef fishing by lamplight. A noted entrepreneur, Bero has cooked professionally for more than two decades and is now based in Melbourne, running events and catering business Mabu Mabu, bar and kitchen Big Esso, Yarraville café Tuck Shop and pantry supplier Kara Meta.

Trinh Richards helms Aldinga restaurant The Little Rickshaw alongside her husband, turning out seasonal, handcrafted dishes capturing the diverse flavours of South East Asia. Action unfolds in a humble tin shed, its rustic surrounds a charming backdrop to standout dining experiences.
